Chicken Haleem from Maimoona Yasmeen’s Recipes

For the gravy:

Ingredients:

Chicken bina haddi ka (boneless chicken): 500 grams
Bareek namak/salt: 1 teaspoon
Haldi powder/turmeric powder: 1 teaspoon
Lal mirch powder/red chilli powder: teaspoons
Garam masala powder/spices: 1 teaspoon
Kata hua hara dhaniya/chopped coriander: 2 tablespoons
Pudine ke patte/mint leaves: 2 tablespoons
Dahi: 125 grams (nearly 1 tea cup)
Bareek kati hui pyaz (thinly sliced onion): 1 tablespoon
Adrak lehsan ka paste/ginger garlic paste: 1 tablespoon
Tel/oil: 2 tablespoons

Procedure:

1. Chicken pieces ko dhokar, inka paani nithar dijiye.

2. Is chicken mein bareek namak, haldi powder, lal mirch powder, garam masala powder, kata hua hara dhaniya, pudine ke patte daliye aur pheta hua dahi daliye.

3. Achhi tarah se milakar ise ek ghante ke liye (for 1 hr) marination ke liye rakh dijiye.

4. Ek ghanta baad, jab chicken marinate ho jaaye, pan mein tel/oil daliye.

5. Bareek kati hui pyaaz daliye aur badami rang ki hone tak pyaz ko tal lijiye.

6. Adrak lesan ka paste daliye aur tees second tak (for 30 sec) bhuniye.

7. Marinate kiye hue chciekn pieces daliye.

8. Achhi tarah se milakar dhakkan dhak dijiye.

9. Medium se dheemi aanch par pakaiyye ke chicken ke yeh pieces gal jaayein.

10. Jab chicken gal jaaye, ise tel chootne tak bhuniye.

11. Aanch band kar dijiye aur chicken ko achhi tarah se mash kar liiye.

For daliya:

Ingredients:

Kute hue gehun/haleem rawa/crushed wheat: 250 grams
Masoor dal/red lentils: a handful
Moong dal/green gram: a handful
Chana dal/split Bengal gram: a handful
Maash/urad dal/ black gram: a a*f@@!@ /> Tuvar dal/pigeon pea lentil: a handful
Pani/water: 2 litres

Procedure:

1. Frying pan saari dalein dalkar badami rang ki hone bhoon lijiye aur nikal lijiye.

2. Cooking pan mein haleem rawa ya kute hue gehun dhokar daliye, ehtiyat se wash kijiye ke kahin yeh rawa paani mein beh na jaaye.

3. Is gehun mein bhuni !%! daalein, dhokar daliye.

4. Do litre paani dalkar dhakkan dhak dijiye.

5. Dheemi aanch par pakaiyye ke gehun aur dalein gal jaayein.

6. Beech mein milate rahiye ke kahin yeh jal na jaayein.

7. Aanch band kar dijiye aur thanda hone ke liye rakh dijiye.

8. Jab gehun aur dalein gal jaayein, inhe bhi hand blender se ya mixer grinder mein grind kar lijiye.

Final preparation:

Mash kiya hua chicken/mashed chicken
Paka hua daliya/cooked wheat and lentils
Kata hua hara dhaniya/chopped coriander: ½ cup
Kate hue pudine ke patte/chopped mint leaves: 12 cup
Bareek namak/salt: teaspoons or as per the requirement
Garam masala powder/spices: 1 ½ teaspoon
Kali mirch powder/black pepper powder: 2 12 teaspoon
Asli ghee/clarified butter/pure ghee: 2 tablespoons+ for garnishing
Pyaz/onions: 250 grams
Kaju/cashews: 25-50 grams
Asli ghee/clarified butter/pure ghee + for garnishing
Kate hue pudine ke patte/chopped mint leaves+ for garnishing
Kata hua hara dhaniya/chopped coriander + for garnishing
Tel/oil: for frying

Final preparation:

1. Frying pan mein tel/oil daliye.

2. Jab tel garam ho jaaye, is mein bareek kati $@? pyaaz daliye.

3. Badami aur crisp hone tak pyaaz ko tal lijiye aur nikal lijiye.

4. Isi tel mein pachas graam kaju badami rang ke hone tak tal lijiye aur nikal lijiye.

5. Is tel se teen tablespoon (3 tablespoons) paka hua tel nikal ka rakh lijiye.

6. Grind kiye hue gehun aur dal mein mash kiya hua chicken daliye.

7. Aadha cup kata hua hara dhaniya daliye.

8. Adha cup kate hue pudine ke patte daliye.

9. Bareek namak, gaam masala powder aur kali mirch powder daliye.

10. Do tablespoon asli ghee daliye.

11. Teen tablespoon paka hua tel daliye.

12. Tali hui pyaaz ko crush kar dijiye aur aadhi crush ki hui pyaaz is mein daliye.

13. Medium aanch par paanch minute (5 min) tak pakaiyye. Beech mein spoon chalate rahiye ke chicken aur gehun sab achhi tarah se blend ho jaayein.

14. Dheemi aanch par pandrah se bees minute (15-20 min) tak pakaiyye aur beech mein spoon chalate rahiye ke kahin yeh jal na jaaye.

15. Aanch band kar dijiye.

16. Bowl mein nikal kar upar se asli ghee, kate hue pudine ke pate, kata hua hara dhaniya, tali hui pyaaz aur tale hue kaju daliye.

Chicken Haleem tayyar hai.
